Beetroot and Parsley Salad Recipe

We all know beetroot promotes blood purification and helps remove toxins from our body. But, did you know that adding beetroot to your meal can also banish acne and impart a natural flush to your skin?

The rich iron content increases the hemoglobin levels in the body and facilitates the transportation of oxygen in the blood cells. It also boasts of a solid antioxidant, vitamin C and Vitamin B6 profile, all of which are necessary to combat damage caused due to sun exposure, pollution, and aging.

Parsley is another potent source of vitamins A, C, and K. So activities like collagen synthesis, dead skin cells removal, and under-eye health are taken care of.

You can have this salad as a mid day meal, as a side in your lunch or top it with scrambled eggs for a wholesome dinner.

Ingredients:
Beetroot – 250g
Parsley – 1 tbsp
Black pepper – 1 tsp
Lemon Juice – 1 tsp
Unsalted butter
Salt to taste

Method:

  1. Peel and dice the beetroot into medium cubes.

  2. Place beetroot cubes into a medium saucepan and fill with water to cover.

  3. Cover with lid. Bring to a boil, then cook for 20 to 25 minutes, until tender and drain the water.

  4. Prepare the ingredients for sautéing. In a pan, add the unsalted butter and toss in the boiled beetroot cubes.

  5. Sprinkle with parsley, black pepper and salt. Serve hot.
